jocelyn's skating and swimming birthday bash

Happiest of birthdays to my Jocelyn!!  We had so much fun celebrating her birth.  She wanted a duck theme and she wanted to go roller skating.  If you know her at all this totally makes sense, but I was kinda wondering how I was going to do this! Then I saw these amazing free printables on Oh Happy Day.  This website has amazing party ideas and the best party supplies!  These images were so perfect and I added a duck to complete Jocelyn's birthday wishes!

We started off the day at Crystal Palace Skating Center.  Roller skating and pizza.  The girls had the best time.  Poor Jocelyn broke her finger playing a game at school in P.E. a couple days before her party.  She was pretty bummed, but it didn't stop her from having fun. How cute are these girls! Jocelyn seriously has the best of friends.

After skating and pizza we headed over to our house. The girls made the cutest charm necklaces. They are almost identical to the necklaces I rocked in the 80s.  The rest of the party was spent swimming and stuffing their faces with treats. The donuts are from Pink Box Donuts, cake made by me, suckers, wax lips and egg candy from Candy Warehouse, and my signature cookie....the meringue.  I LOVE them because I can shape them any way I need to fit my party.  These egg shaped ones are probably my favorite to date. Check out the recipe at the end of the blog post.

Meringue Cookies
INGREDIENTS:
6 egg whites
1/2 teaspoon cream of tartar
1 1/2 cups sugar
2 tsp. of any kind of extract that you want
DIRECTIONS:
Preheat oven to 200 degrees F. Line two baking sheets with a baking silpat mat.
Beat egg whites in a large bowl on medium speed until foamy. Add cream of tartar. Increase speed to high and continue beating until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form. About five minutes. Quickly mix in your extract of choice or if you want a very white finish don't add anything. Then stir in your food coloring until you have the color you want.
Spoon meringue into a pastry bag fitted with your piping tip of choice. Pipe into your desired shape. Depending on the size bake for around 2-3 hours. They should be dry and crisp.
